Ingredients:
• 1 can cannellini beans
• 4 diced tomatoes
• 1 small/medium onion
• 2 bay leaves
• 3 cloves garlic
• 1 tsp. smoked paprika
• Salt and pepper
• ¼ cup parsley
• 2 tbs. coconut oil
Instructions:
1. Sauté onions until softened.
2. Add garlic and bay leaves and stir for approximately 1 minute to simmer in the flavour and aroma.
3. Add the tomatoes and cannellini beans and simmer for 5 minutes (or until thickened).
4. Add chopped parsley and season with salt and pepper.
Hint: perfect to serve with bacon eggs and avocado!
